The Best Caramel Popcorn


This caramel popcorn recipe is the best and worst thing that ever happened to me. The best because it means my Friday night sugar cravings can be sated within mere minutes and the worst, well because by Friday night sugar cravings I mean Monday, Tuesday, Wednesday, Thursday and Friday night sugar cravings... whoops. To put it simply, this caramel popcorn is so irresistibly scrumptious that it takes one batch to become addicted. So precede with caution because I am about to corrupt you. 

  • 100g butter 
  • 1/4 cup of golden syrup
  • 1 cup of caster sugar 
  • 1 tsp of salt 
  • 1/3 cup of popping corn  

  1. Pop your corn. I use an electric air popper but if you don't have one you can cook your popcorn by heating a small amount of oil in a pot. Once the oil is hot add you corn and take off the heat once popping slows. Once your corn is popped lay it out on a tray ready to pour your caramel over. 
  2. add your butter, golden syrup, caster sugar and salt to a small pot and melt on a high heat. continue to stir your caramel until it boils. It's important when making your caramel that you cook it for long enough. Not long enough and it wont set, too long and it will burn - neither are desirable. You want to cook your caramel until it boils viciously and changes to a dark richer colour (see above). Then quickly take off the heat, pour over your popcorn and combine until all the popcorn is covered. 
  3. Place in fridge and allow to cool.

Rice Bubble Marshmallow Slice

If your in need for a quick and mighty delicious snack this three ingredient rice bubble slice is the perfect recipe. 



You will need:

- 1 280g packet of Marshmallows
- 70g of butter
- 4 cups of rice bubble


Steps:

1. Melt butter in a pan
2. Once melted add in marshmallow and stir until completely melted
3. Add in rice bubble and stir until consistent
4. Turn out into line pan and press flat with the back of a spoon
5. refrigerate until set

Healthy Treats - Double Chocolate Muffins

Hello everyone! So this week I have another recipe for you. In the spirit of 2015 I have been striving to improve my lifestyle which involves trying to be a lot healthier. This recipe is no where near health food territory, lets face it nothing titled 'muffin' or 'double choc' is really going to be 'healthy'. But this recipe I came up with is waaay better for you than any sweet treat you pick up in a package on supermarket shelves. I am a firm believer  in the 'everything in moderation'concept. As long as we're eating good foods in their natural state 90% of the time, it's totally okay to treat ourselves the other 10% of the time. The awesome thing about these muffins is that, yes, they're a treat but they aren't 'bad' for you like alot of the other foods we turn to to stop the sugar cravings. They're actually pretty good for you and they don't have any crazy health ingredients in them. (don't you hate that) They contain dark cocoa and dark chocolate which believe it or not have some really good health properties like: it's full of antioxidants, it's good for heart health, and its improves brain function. To put it simply these muffins are a great choice when looking for a 'good' treat.  


Ingredients:

  • 1 1/2 cups SR flour
  • 1/4 cup 100% pure dark cocoa 
  • 1/4 cup stevia or other natural sweetener
  • 1/3 cup desiccated coconut
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/2 220g block ( or 110g) of  70% - 80% dark chocolate 
  • teaspoon of vanilla extract

Method:

  1. Sift SR flour, cocoa powder and stevia into a bowl. Add in coconut and combine.
  2. Mix milk, eggs and honey together in separate jug or bowl. When combined add to dry ingredients and mix well.
  3. microwave coconut oil for 10 - 15 seconds so it melts. Add into mixture while stirring. Keep stirring to incorporate the oil.
  4. Chop the chocolate into chunks (it can be as chunky or fine as you wish ) add to mixture and stir to incorporate evenly.
  5. spoon into twelve muffin cases and bake at 170 degrees celcius for 15 - 20 minute or until well risen and cooked through.

Healthy Sugar Free Blueberry and Oat Muffins

Hello everyone! Since I have now finished school for 2014 (woo!) I am trying a lot harder to be more healthy. I know I'm not the only who gives in to sugar cravings so I have created this recipe that fulfills my sugar needs without actually containing the sugar!

 For this Recipe you will need:

  • 1 cup of oat flour
  • 1 1/4 cup SR flour 
  • 1/2 teaspoon of baking powder
  • 2 1/2 tablespoons of chia seeds
  • 2/3 cup of natvia 
  • 1/3 cup of coconut oil 
  • 1 tablespoon of treacle 
  • 2 eggs
  • 2/3 cup of milk
  • 1 cup of frozen blue berries or mixed berries

  1. sift dry ingredients (oat flour, SR flour and baking powder) into bowl. Add natvia and chia seeds. Combine.
  2. Melt coconut oil in microwave for 10 seconds, Keep coconut oil separate from other wet ingredients as cold ingredients such as milk and egg will cause it to clump. 
  3. Combine other wet ingredients (treacle, eggs and milk) in a separate jug or bowl. Wisk together with a fork.
  4. Add coconut oil and wet ingredients to dry ingredient and mix well. 
  5. Once combined add in frozen berries and mix lightly to disperse the berries evenly through the mixture.
  6. Spoon into muffin cases and bake in a moderate oven (180 degrees celsius) for 25 minutes or until golden.

Great-Nana's Custard YoYos

 This is my mum's Grandma's yummy recipe for Custard Biscuits. There's something so lovely about taking the time to make a nice cup of tea, in a nice cup  and sitting down to enjoy it with a nice biscuit. These biscuits are sooo yummy and super easy to make, only five ingredients!



For This Recipe You will need:





 Ingredients: 60g of custard powder, 60g of icing sugar, 170g of Plain flour, 170g of Butter, pinch of salt   

 Method: 

  1. preheat oven to 150ºC
  2. cream butter and icing sugar together until pale and creamy
  3. sift in custard powder and flour. add salt
  4. stir together until mixture is formed 
  5. role into balls and place on tray. press flat with floured fork
  6. bake in the oven for 30 minutes or until golden
  7. allow to cool and crisp
  8. eat!!
